Sauteed Peppers over Rice

A really delicious and simple way to use peppers

2 Tablespoons Olive Oil (one for light cooking)

1 yellow onion chopped any way you like

1 garlic clove chopped

1-2 tomatoes chopped

3 sweet peppers or mild hot peppers (like cerano, hot wax, pablano etc) chopped length wise with seeds removed.

any hardy green vegetable chopped (kale, green bean, or cabbage works nice)

Any fresh herbs you have on hand like parsley, savory or thyme works nice. Chop fine.

1 cup Water

Salt and Pepper to taste

Heat oil in large cooking pan with lid. Add chopped onion and saute for 5 minutes, add garlic and tomatoes and chop for another 5 minutes. Stir. Add your peppers and herbs saute for another 5 minutes. Then add 1 cup water and chopped green Veg. Stir. Add 1 cup garbanzo bean or any white bean. Stir. Put lid on pan and cook for another 5-7 minutes until green veg done.  Serve over rice. Enjoy!
