Red beets & beet greens

Red Beets & Beet Greens
1 bunch beets with greens
1/4 C olive oil
1-2 T minced garlic
2 T chopped onion
1 T red wine vinegar
salt & pepper to taste

Heat oven to 350 degrees. Wash beets. Separate greens from beets and set aside. Do not skin beets. Toss beets with 2 T oil and place beets in baking dish, cover and roast for about an hour or until tender. When beets have about 10 minutes remaining, heat remaining oil in skillet over medium heat. Add garlic and onions. Tear greens into bite size pieces and add to skillet. Cook until wilted. Season with salt & pepper.
Serve roasted beets with vinegar lightly sprinkled on top with salt & pepper. (Or you may wish to melt butter on beets instead of the vinegar.) Serve greens next to beets on plate.
