No-bite Mustard Greens

Ingredients:

 

2 bunches Mustard greens –Stems removed.

1 bunch baby white turnips chopped

1 white onion chopped

1 tbsp butter

4 strips bacon

2 tbsp light brown sugar

1/3 cup water

3 tbsp olive oil

Salt & Pepper to taste

 

Prep:

 

Grab a 6 or 8-quart stockpot.

Add butter, olive oil, and onion--- let mixture sweat for about 8 minutes.

Add bacon and turnips.

Salt & Pepper to taste.

Sautee for 5 minutes

 

To remove the stems – lay stems flat on cutting board and firmly pull knife along side of center stems. Then tear stem less leaves into strips.

Fold mustard greens into mixture. Taste, add salt & pepper and brown sugar. Adjust to your liking. Add water fold mixture again; be sure not to burn greens.

 

Mustard Greens will be ready in about 15-20 minutes.

Serve with Cajun Grain Brown Jasmine Rice and Reincarnated Tomatoes. Don’t forget the cornbread.
